What is Food and Who Decides? A New Look at Standards of Identity

Monica Theis, Senior Lecturer in the Department of Food Science at UW-Madison and Jeffrey Glazer, Clinical Associate Professor at the Law & Entrepreneurship Clinic will reflect on several topics covered in "The Poison Squad" (UW's Go Big Read) and discuss the challenges surrounding food definitions. Learn about standards of identity, current controversies, and the role and actions of the FDA. Since 1990, Monica has been teaching and providing community outreach services at the University of Wisconsin. She is responsible for teaching all food and nutrition management courses in the dietetics programs and provides teaching support for a number of courses in the Food and Nutritional Sciences departments. She also co-teaches a course entitled Food Laws and Regulations. Jeff works in the UW Law & Entrepreneurship Clinic supervising students' representation of startup businesses. He (re)designs many of the Clinic's systems and processes to make handling large caseloads more manageable for both students and supervisors. He leads the Clinic's initiatives in food and beverage and has written and spoken frequently on issues facing startups in the food and beverage industry.
