Middle Eastern Cooking with Huma Siddiqui

Join local author and cooking instructor Huma Siddiqui for an online cook along/demonstration. On the menu will be lentils cooked with fresh spinach, turmeric, chili powder and topped with caramelized onions and jalapenos and Pepper Pulao - basmati rice cooked with red peppers, green onions and cilantro. A limited number of complimentary spice packs will be available to pick up at the library’s lower level service desk beginning October 14 (one pack per person).

Pepper Pulao-Basmati Rice cooked with Red Peppers: 

2 cups uncooked Basmati rice

1 tablespoon cooking oil

1 teaspoon whole cumin 

1 4 inch cinnamon stick

½ cup green onions, chopped

1 red pepper, chopped

½ cup cilantro

¼ teaspoon turmeric


Rinse rice gently and drain the water. Heat oil in a pan, add the whole cumin and cinnamon stick. Let it sizzle for a minute. Add green onions, red peppers and cilantro. sauté for a minute or so. Add rice, salt and turmeric. Add 3 cups of water. Let it come to a boil and then reduce the heat and leave to simmer for 15-20 minutes. Serve with curries. 

Palak Dal-Lentils with Spinach:  

1 cup orange lentils

2 cups warm water

½ teaspoon turmeric 

½ teaspoon chili powder

1 teaspoon salt

2 cups fresh spinach, chopped


1 medium onion
2 tablespoons vegetable oil
1 jalapeno, sliced

Wash the lentils thoroughly, add warm water and bring to a boil. Add all spices and let it cook on medium heat for about 20 minutes. Add chopped spinach and cook for another 15 minutes. In a frying pan, warm up the vegetable oil, add onions and jalapenos. Let everything turn caramelize. Top the lentils with the caramelized onions. Serve warm with basmati rice.
